Can I switch later?

Yes. Change preference from My Account (per eSIM). A short restart of the eSIM line or phone radio helps the new preference take effect.

Does Best coverage cost more?

It can, because you may attach to a higher-priced network. Check pricing for the country you’re in if you want the absolute lowest €/GB.
